If you like spicy, you love this chicken. We were looking for a different way to spice up our regular lemon roasted chicken thighs. We kept the lemon but added a lot of heat. If you do not like it really spicy stick with Jon’s Famous Tuscan Chicken. If you want a medium heat chicken, do not marinate the chicken very long or cut the spices in half. Give this recipe a try I know it is one we will be making often.
- 2 lbs chicken thighs
- 2 tbsp paprika
- 1 tbsp garlic powder
- 2 tsp cayenne pepper
- 2 tsp pepper
- 1 tsp salt
- 1 lemon, zest and juice
- olive oil
- In a bowl add, paprika, garlic powder, cayenne powder, salt and pepper. Add the lemon zest, juice and 1/4 cup of olive oil and mix to make a marinade.
- Add your chicken thighs to the marinade. make sure the chicken is fully coated and marinade for up to 2 hours. If you want less heat you can marinade for 30 minutes.
- Preheat the oven to 420F. Place chicken thighs in a roasting pan and roast for about 30 minutes, until cooked through.
- Turn on the broiler and broil until the skin is lightly crisp, 2 to 3 minutes. Take the roasting pan out of the oven, set chicken thighs aside and let them rest for about 5 minutes before serving.
- Serve Hot and Enjoy!
We served our chicken thighs with roasted corn and a mushroom herb couscous. So yummy!
