Clean Eating Sweet Potato Shepards Pie

Now that the weather is getting cooler, it is time to make those warm and cozy winter meals that we all know and love. Growing up we ate shepard’s pie a lot when the weather was cold. I decided to make this recipe with sweet potatoes because I prefer them to regular potatoes and they are better for you. Give this recipe a try, believe me it is super yummy!!

  1. To make sweet potato toppings cook sweet potatoes and potatoes one of two ways. You can bake them in the oven at 375 degrees for an hour. We find it easier to bake in the microwave. Cook till potatoes are fork tender.
  2. Peel potatoes, add to a large bowl and mash with a potato masher. You can also use a food processor if you have one. Add olive oil, milk, nutmeg, and salt and pepper. Stir until blended. Adjust seasonings as needed.
  3. While potatoes are baking, add olive oil to a large skillet over medium heat. Saute the turkey, onions, and garlic until meat is cooked and golden. Add the celery, carrots, and cinnamon. Continue to saute over high heat until carrots start to soften approx 5 minutes.
  4. Add the worcestershire sauce, dijon mustard, thyme, rosemary and stock. Bring to a boil. Reduce the heat to low. Season with salt and pepper. Simmer covered until meat is tender and the liquid is absorbed, about 20 minutes. Remove from heat and set aside.
  5. Add peas to meat filling and transfer to a medium baking dish. Spoon the sweet potato mixture on the top of the meat filling. Spread with a spatula to completely cover meat. Bake at 350 degrees until top is golden about 25-30 minutes. ENJOY!
