Clean Eating Vegetarian Chili

I am not a vegetarian but we do like to eat a few veggie only meals here and there. I was really trying to do meatless Monday for awhile but we did start to forget about it. This recipe is an amazingly flavorful veggie chili. It is really good the first day but even better the second and third. Give it a try, the chocolate really gives it a rich taste!

Ingredients

  • 2 tbsp cumin
  • 2 tbsp olive oil
  • 2 yellow onions, chopped
  • 1 red bell pepper, chopped
  • 2 carrots, peeled and grated
  • 4 garlic cloves, minced
  • 3 tbsp chili powder
  • 1/4 tsp red pepper flakes
  • 1 cup white kidney beans
  • 1 cup chick peas
  • 1 cup black beans
  • 1 cup corn kernels
  • 2 1/2 cups veggie stock
  • 2 tsp oregano
  • 2 tsp basil
  • 4 squares drk chocolate
  • 28oz canned diced tomatoes
  • juice of 1 lime
  • juice of 1 lemon

Preparation

  1. In a dutch oven or large stock pot, warm olive oil over medium heat. Add onion, pepper, garlic, grated carrot and saute until onion becomes translucent. Stir in chili powder, cumin, red pepper flakes, salt and pepper. Cover and cook over low heat for 20 minutes.
  2. Add remaining ingredients. Stir well. Cover and let simmer for 20 minutes. Remove from heat and serve. Enjoy!
