So if you have not heard of engagement chicken, I will give you the scoop. It is a roasted chicken that ladies that are trying to get their men to propose to them by preparing. The story is that if you make a man this chicken he will propose in about 2 weeks. Well Jon makes me this chicken and it is one of my favorite things that he does. If we were not already married I would propose to him over and over again! Try it and you will see how this chicken could inspire you to marry the person that made it!
- 3 Lbs Chicken, organic
- 2 Lemons
- Lemon Thyme
- 2 Cups of chicken stock
- Olive Oil
- Kitchen Twine
- Vegetables of your choice for roasting
Preheat oven to 425
Rinse chicken with water and pat dry with paper towels. Season the inside cavity with salt and pepper liberally. Stuff the cavity with lemon thyme and one of the lemon quartered.
Cross the chickens legs and tie together with the twine. (Bing ” trussing a chicken”).
Line a ovenproof pan with slices of the second lemon. Place the chicken on top of the lemon slices. Coat with olive oil and season the chicken with plenty of salt and pepper. Place extra lemon thyme in the pan surrounding the chicken and por the chicken stock into the pan.
Place the pan in the heated oven and cook for 20 minutes. Turn down the oven to 375 and cook for an hour or until the juices run clear when the leg/thigh is pierced with a fork.
The last 30 minutes of the roasting process, place your veggies in a roasting pan, coat with olive oil and season with salt/pepper and roast for 30 minutes.
When the chicken is done, remove and place on a cutting board to rest. Also remove the veggies and set aside. while the chicken is resting, spoon some of the pan juice into a pot and bring to a boil and reduce the liquid by half. Quarter the chicken after it has rested for 5-10 minutes for serving.
To serve, place some chicken on a plate along with some of the roasted veggies. Spoon some of the reduced juice over the chicken and enjoy!
