This is a recipe I came up with on my own while experimenting in the kitchen. Give it a try and let me know what you think!

Marinara Sauce Ingredients:

  • 1 can whole tomatoes
  • 1 can diced tomatoes
  • 1 can of tomato paste
  • 2 large onions diced
  • 2 celery stalks
  • 1 bulb of roasted garlic
  • 1 tsp olive oil
  • 2 tbsp fresh basil
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp crushed red peppers
  • balsamic vinegar
  • salt & pepper

Preparation

  1. Heat 1 tsp of olive oil in a large pot, add diced onions, diced celery and roasted garlic (roast the garlic before hand). Cook for 5-8 minutes till onion is translucent.
  2. Add tomatoes, herbs, a splash of balsamic vinegar and let simmer for 60 minutes. Add salt & pepper to your liking.

Spicy Meatballs

Ingredients

  • 1 lb ground beef/turkey/chicken what ever you prefer
  • 1 small onion
  • 1/3 cup wholewheat bread crumbs
  • 1 garlic clove minced
  • 1 tsp worcestershire sauce
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/2 tsp chili paste
  • 1/3 cup chicken broth
  • 1 tbsp olive oil

Preparation

  1. Preheat the oven to 400 degrees. Grease a pan with olive oil. Place all ingredients in a bowl and mix together with your hands. If it is to dry add more chicken broth.
  2. Make mixture into small round meatballs. Place on the greased pan. They do not spread out to much, I was able to fit all of them on one pan! Cook for 25 minutes

Once the meatballs are cooked I like to add them to the pot of sauce and let it simmer for 5 minutes. You can eat the meatballs on their own, with pasta or even quinoa! Serve hot.
